Solvstream Farm
We are an 8 acre farm in the heart of the Catskills focused on regenerative agriculture, and operated according to permaculture principles.
We are working towards producing small-batch artisan products from ingredients grown on farm or locally, all fed from pristine mountain water.
We believe access to quality organic food at a reasonable price is a fundamental right of the Catskill and surrounding communities.
Our Story
Intentional Living
Born and raised in New York, and having lived in the Hudson Valley for 25 years, the family has chosen to pour its energy and soul into this beautiful, wild and untouched part of the Catskills.
Solvstream, Danish for "silver stream", draws on the family's heritage and highlights the significance of the flowing course of water that runs through the middle of the property.
The intention is to live harmoniously with the natural environment, as land custodians, rather than landowners, in a way that balances the needs of all that contributes to the fabric of the surrounding natural environment - plants, animals and people - and the stream itself.
Our farm is planned to be operated on a model using permaculture principles that balance social equity access to quality organic produce for the local community, as well as leveraging our proximity to the commercial city markets of New York, Boston and Philadelphia.
Above all, Solvstream is being carefully and deliberately developed respectfully within the framework of the Memorandum of Agreement (MoA) - the dual objectives of which are to simultaneously enhance both the quality of NYC drinking water and the vitality of the watershed communities.

What We Produce
We are focused on consumable products that contribute to wellness
We believe that the combination of natural assets of water, sunshine and soil of the Catskill region provide us with a unique opportunity to produce food in a way such that it is available to the community at a reasonable cost for the highest quality.
We are focused on cultivating quality rather than quantity, and on producing speciality and market niche products that are unique to this magical and wild place.
Wellness
Heirloom vegetable-focused ferments and preserves, incorporating signature on-farm enhancements such as honey, ginseng and lavender.
Horticultural
Microgreens, herbs and spices grown both conventionally and in controlled/indoor environments, as well as wild berries and orchard fruits.
Woodland
Mushrooms grown across four acres of first growth forrest used for medicinal extracts, as well as ramps.
